Tex Mex Wild Turkey Soup

Ingredients:
• 4 garlic cloves
• ¼ cup butter
• 3 tablespoons cumin
• 3 tablespoons paprika
• 2 tablespoons chipotle powder
• 1 onion, diced
• 3 carrots, sliced
• 3 cups turkey, cubed
• 4 cups chicken broth
• 1 can black beans
• 2 cans corn kernels
• 2 cans diced tomatoes (spicy)
• 1 tablespoon salt
• Black pepper, ground (to taste)
Instructions:
In your largest pot, mix the garlic, cumin, paprika, chipotle powder with the butter on medium heat for two minutes.
Add carrots, onions and wild turkey.
Cook on high heat for five minutes, stirring well until turkey is cooked through.
Add chicken broth, corn, black beans and tomatoes.
Cook on high heat for five more minutes, then simmer on medium-low heat for 30 minutes.
Season with salt and pepper to taste.
Add a sprinkling of fresh cilantro to each bowl to serve.
