Ingredients

• 2 lbs. turkey breast

• 1 cup milk

• Two eggs

• 1 ½ cups self-rising flour

• 1 teaspoon baking powder

• Salt & Pepper

• Cajun seasoning

• Peanut oil

Instructions:

Start by cutting turkey breast into bite-size pieces. Next, combine the milk and eggs in a large bowl and beat together. Add the turkey to coat evenly.

In another bowl, combine the flour and baking powder. Season to your liking with salt, pepper, and S.B.O. Cajun seasoning. Add the turkey and mix so it is evenly coated with the batter.

Prepare an iron skillet or frying pan with about 2 ½ inches of peanut oil. Bring oil to 325 to 350 degrees. Add the battered turkey leaving about 1 inch around each piece (do not overcrowd the pan). Fry to golden brown. Remove and drain on a plate lined with paper towels.

Serve with french fries and enjoy!
