Seafood is intimidating for a lot of home cooks, but it doesn't need to be. Like anything else, you learn by doing. Shrimp are going to cook fast, and overcooking seafood is one of the worst things you can do. Shellfish get chewy and rubbery, fish get dry and inedible.

What you need:

4 lbs fresh or frozen shrimp, peeled and deveined
1C buttermilk
Kosher salt and pepper
Peanut oil

Tartar Sauce:
2C Mayo (your favorite)
Dash of Worcestershire Sauce
As much sweet relish as you want
Juice of half a lemon
Kosher salt and pepper

2 parts cornmeal
1 part flour
Kosher salt and pepper
